Recipe: MEDITERRANEAN ZOODLE SALAD
MEDITERRANEAN ZOODLE SALAD
1 large english cucumber
2-3 yellow zucchini
¾ cup fresh diced tomato
1 small red onion
½ cup feta cheese
¼ cup sliced black olives
3 TBS olive oil
1. Peel your zucchini and cucumber then spiralize them.
2. Cut your tomato.
3. Drain and rinse your olives then slice them if they need it.
4. Place all ingredients in a large bowl.
5. Juice 1-2 lemons for dressing.
6. Add 3 tbs olive oil, and cracked pepper. Pour it over your zoodle mixture and combine until it is well coated.
